Homemade RootBeer


Needed:
  Five gallon (or larger) container
Wooden spoon
5 pounds dry ice
5 gallons water
5 pounds sugar
1 bottle rootbeer extract

 
This recipe makes about 5 gallons of rootbeer, but it can be adjusted to make more if needed. I have not had much success making less than 5 gallons, but have made 25 gallons at on time using a new plastic trashcan and a boat paddle to stir it. Leftovers can be put in 2 liter plastic bottles and stored in a cooler or refrigerator.
 
  1. Bring about a gallon of water to a boil and slowly stir in 5 pounds of sugar. Lower the heat a little and stir slowly until the sugar is dissolved. Turn off the heat and let the mixture cool for around 5 minutes.
  2. Pour the sugarwater mixture into your 5 gallon container (I use a water cooler.) Pour in the rootbeer extract and stir with a wooden spoon until it is dissolved. Do NOT use any metal containers or utensils.
  3. While stirring, slowly pour in the rest of the water.
  4. Break the dry ice up into chunks about 2 inches square and add a few chunks at a time to the rootbeer. Continue until all the dry ice has been added. Stir the mixture frequently to prevent the dry ice from freezing to the bottom of your container. As the dry ice dissolves, it will bubble and let off a lot of fog. SAFETY NOTE – Dry ice will burn you. Always wear gloves when handling it.
  5. When the mixture has stopped bubbling (or at least slowed down a lot), stir it again and place a cover loosely on the container. Air still needs to escape, so do not screw the lid down.
  6. You should have a slightly carbonated, cold rootbeer. Serve and enjoy!
 
You may want to adjust the proportions of the ingredients to your taste after making it a few times. I prefer to use extra sugar and dry ice.
